This is our exciting new Alabama bed and breakfast Signature Dish. We are excited to add it to our delicious breakfast menu, but also want to share this treat with all of you! This one will leave an everlasting impression on your breakfast guests. It is “labor-intensive” so be forewarned. The tomato gravy & grit cakes can be prepared in advance, however, extending your workout session may be needed.

Tomato Gravy Ingredients
- 1/2 cup rendered bacon fat
- 2 tbs flour
- 1 cup whole Milk
- 1 16 oz can diced tomatoes
Directions
Tomato Gravy: Heat the oil in a large skillet over medium heat. Whisk in the flour. Cook and stir over medium heat until browned for about 10 minutes. Gradually stir in milk so that no lumps form. Continue stirring until thickened. If the gravy becomes too thick, you may thin it with a little more milk. Then add diced tomatoes. Gravy may be chilled then reheated and used later.
Grit Cakes: Prepare grits according to the package. (No true southerner uses instant grits) Cook at least 1.5 hours for a more creamy texture. We always add a touch of garlic salt and cheddar cheese to taste then pour grits onto a sheet pan. Grits should be about 3/4 inches thick. Let cool then refrigerate until needed. Cut with a cookie cutter and flour both sides. Use a 375-degree electric skillet and fry in oil for about five minutes on each side. Then strain on paper towels and you’re done.
Plating
Begin with the grit cake and top with Canadian bacon, then add a poached egg to the top. Top it with the delicious tomato gravy. Garnish with a few leaves of fresh spinach, fresh diced tomatoes and a sprig of parsley or thyme. Skillet fried bacon is an optional and tasty bonus.
